Mango Coconut Fro-yo with coconut granola

Ingredients

Muesli

  • 40g coconut chips, roasted, crushed (optional)
  • 1/4 cup white chia seeds
  • 3 cup rolled oats  
  • 165 grams pepitas & sunflower kernels seed mix  
  • 1/2 cup natural sliced almonds
  • 2 tbs olive oil

Fro-yo

  • 4 cups of frozen mangoes
  • ½ cup Greek yoghurt
  • ½ lemon, juice
  • 1 tsp ground cinnamon
  • 4 tbsp honey

    Serves: 4

    Preparation: 40 Minutes

    Method

    1. Preheat oven to 160C. Mix together coconut chips, chia seeds, oats, pepita mix, almonds, and olive oil.
    2. Spread out onto a lined baking tray and bake for 30 mins until golden brown, stirring halfway through.
    3. For the fro-yo, in a food processor, blitz the mangoes, yoghurt, lemon juice, cinnamon, and honey until smooth.
    4. Serve fro-yo with the roasted muesli.
